1 cucumber  
  salt  
2tsps Chopped salted chillies  
2tsps garlic very finely chopped
3tbsps rice vinegar (white)  
2pinches white sugar  
1tsp sesame oil  
  Chilli oil to taste
  1. Place cucumber on a chopping board and whack hard, several times, with the flat side of a cleaver, so that it splits and opens up with jagged cracks, then chop it into bite-sized pieces.
  2. Place in a bowl, sprinkle with 0.5 tsp salt and leave for 30 mins. After this time, drain off the water in the bowl.
  3. Add the chopped salted chillies, garlic, vinegar, sugar and salt to taste, mix well and leave for a few mins to let the flavours blend.
  4. Just before serving, add the sesame oil and chilli oil to taste, toss and serve.
