- Place cucumber on a chopping board and whack hard, several times, with the flat side of a cleaver, so that it splits and opens up with jagged cracks, then chop it into bite-sized pieces.
- Place in a bowl, sprinkle with 0.5 tsp salt and leave for 30 mins. After this time, drain off the water in the bowl.
- Add the chopped salted chillies, garlic, vinegar, sugar and salt to taste, mix well and leave for a few mins to let the flavours blend.
- Just before serving, add the sesame oil and chilli oil to taste, toss and serve.
