500grams beef rump steak cut into 2cm cubes
2tbsps lime (juice)  
2tbsps vodka or brandy
1tbsp groundnut oil  
1tsp coriander seeds (ground)  
1tsp cumin seeds (ground)  
2cloves garlic crushed and minced
2tsps ginger (fresh) finely grated
1tsp lemon (zest)  
1pinch salt  
0.3cup soy sauce (sweet)  
  1. Put soy sauce, lime juice, vodka (or brandy), 2 tsps of oil, coriander, cumin, garlic, ginger, lemon zest and salt into a bowl. Add the beef, stirring to coat thoroughly. Cover and refrigerate for between 2 and 8 hours, stirring a couple of times during this.
  2. Remove beef from the marinade and thread onto wooden skewers (which have been soaked in water for 30 mins).
  3. Oil the grill of a barbecue or oven-top griddle, heat until very hot. Grill the skewers over a high keat, turning frequently, until the beed is cooked to taste (say 5 mins).
