Extraordinary beef satay

- Put soy sauce, lime juice, vodka (or brandy), 2 tsps of oil, coriander, cumin, garlic, ginger, lemon zest and salt into a bowl. Add the beef, stirring to coat thoroughly. Cover and refrigerate for between 2 and 8 hours, stirring a couple of times during this.
- Remove beef from the marinade and thread onto wooden skewers (which have been soaked in water for 30 mins).
- Oil the grill of a barbecue or oven-top griddle, heat until very hot. Grill the skewers over a high keat, turning frequently, until the beed is cooked to taste (say 5 mins).
