Lamb koftas

1thick slice bread, brown soaked in cold water for 2 minutes, then squeezed out
500grams lamb (minced)  
2cloves garlic crushed
2tsps paprika  
1.5tsps cumin seeds (ground)  
1.5tsps sea salt  
2tbsps parsley (flat-leaf) chopped
2tbsps mint chopped
1tbsp dill chopped
  olive oil for cooking
  1. Place all the ingredients in a bowl. Mix well with your hands (I prefer to pulse in the food processor until well combined).
  2. Shape into patties and chill (I like to make small ones and serve four per person).
  3. Grill on both sides over a barbecue.
