MARITIME CANADIAN
The Maritimes region of Canada (New Brunswick, Nova Scotia, Prince Edward Island and Newfoundland - sometimes referred to as Acadia) has some unique foodstuffs that are indigenous to the area as well as non-native foods brought into the area. Much of what is local food or regional cuisine there could be found in the foods of the original native population. Fiddlehead greens are unique to the Maritimes and can be served in various ways. Seafood is of great importance, not least in the form of lobster rolls. Another local ingredient is dulse, a type of seaweed which is often dried as a black salty-tasting snack or side dish.
