A region in northwestern North America, bounded by the Pacific Ocean to the west and, loosely, by the Rocky Mountains on the east. Definitions of the region vary: it is usually considerd to include the U.S. states of Oregon and Washington and the Canadian province of British Columbia, but is sometimes extended to include the state of Alaska and the Yukon territory.
Cuisine of the area include wild salmon, huckleberries, a wide variety of Asian cuisines and locally-produced fruits, vegetables and cheeses. Chinese, Japanese, Korean, Italian and Greek cuisines are prevalent throughout the Northwest (most especially in Vancouver) and reflect the historically strong presence of those communities in the restaurant industry there.
