A fusion of African, Amerindian, British, Spanish, French, Dutch, Indian and Chinese cuisines. These traditions were brought from the many homelands of this region's population. In addition, the population has created styles that are unique to the region.
Primary ingredients include chicken, goat, fish (including flying fish) and seafood. Local vegetables include breadfruit, pawpaw and okra.
Significant traditional dishes include jerk chicken, goat stew, callaloo (a dish containing leafy vegetables and sometimes okra), rice and peas, macaroni pie, coucou (derived from African cuisine, made from cornflour and okra, often with an added ingredient such as breadfruit or plantain) and pepper pot.
