Originally from Central America, but now widely grown throughout the world. It is now regarded as the typical chile used to heat up any curry and huge quantities of it are grown throughout India. The fruits are generally dried and ground, or pulped and baked into cakes, which are then ground and sifted to make the powdered spice of the same name. Its clean heat intensifies and clarifies flavours much like salt or lemon.

A dusting of cayenne over fresh papaya or mango is a Caribbean tradition.
