A relatively sweet chile from Spain that matures from green to brown to red. As the name implies, it is used in the manufacture of chorizo sausages.

Although available fresh in Spain, it is more usually sold sun-dried (as shown) when it has a slightly smoky flavour. The drying process also gives greater longevity to the fruit.
