The dry-smoked form of the poblano (the name ancho means 'wide'). An ancho is browish-black in colour like a dried mulato.

 

Part of the 'holy trinity' of chillies (along with mulato and pasilla) used in a traditional mole, as well as other Mexican sauces and stews. Also great for stuffing and cooking in the oven or BBQ.
